We know exactly where the raw material destined for our crops comes from: from our fields. At Il Cerreto we use self-produced seeds; this means that part of the harvest, once cleaned and properly processed, is stored and used for sowing, for a virtuous circle that guarantees us a constant eye on the product supply chain.
For the same reason, we favour processing within the farm, so as to control all the steps that bring production to your tables. When this is not possible, as with tomatoes or pasta production, we rely on carefully selected companies that recognise the values of biodynamics and operate with a philosophy similar to ours and to those who choose us.
Our cereals, for example, after harvesting go through a pre-cleaning phase and then storage in a refrigerated cell. From here a selection is made, one part goes to the organic mill, another continues with hulling and pearling, to then be packaged in a protected atmosphere, guaranteeing freshness. On the farm we also carry out checks for the presence of any insects using CO2.
