The animal is a sentient being, who internalises the sensations it experiences and becomes what it lives. Our task is therefore to allow them to live in a right present while remaining in contact with the other kingdoms of nature: for this reason on our farm we do not have a proper stable but a simple shelter where the animals can find refuge from the sun and wind, drink, eat and rest. For most of the time they live on pasture or in the woods along the Cecina stream, a source of coolness as well as nutritious foliage.
Pasture farming allows our Pezzata Rossa breed cows to express their natural behaviours, feeding on grass, tree branches, shrubs, as well as hay and cereals from the farm: flavours that are returned to us in the dairy products that our dairy produces.
Our cows have horns, by farm choice and in line with the biodynamic guidelines. This contributes, together with gentle methods for moving them and for creating a healthy human-animal relationship, to their tranquillity and serenity.
It is also important for the animal to be able to express its natural species behaviour, which is why in our farm the calves remain in contact with their mothers who suckle them until 3 months of age: to allow milking to be carried out they are separated from them for a few hours a day, while remaining in visual contact. In this way the animals can live the natural mother-child relationship and prevent stress at weaning.
The health of the animals is protected through good farming practices and, in case of illness or trauma, they are treated with homeopathic remedies and phytotherapeutic preparations.
Livestock farming is a fundamental component of a biodynamic farm: the grazing of cows gives fertility to the soil through nutrient-rich manure and grazing in the woods has a maintenance effect by containing flammable material, preventing the spread of any fires.
Our hay milk STG (Traditional Speciality Guaranteed) is processed in the farm dairy located a few metres from where the cows are milked, so that just a few hours after milking it is transformed into yogurt, cheese and mozzarella that tell us all the scents and flavours of our farm.
They are products rich in omega-3 that can also nourish us with what the animal has been able to experience on the farm: the tranquillity and cyclical nature of daily life marked by the succession of the seasons.
In spring we will smell the scents of flowers and green meadows, in summer that of the Mediterranean scrub, in autumn and winter the essences of holm oaks, hay and biodynamic cereals that the sun, with the complicity of man, has wisely ripened in the summer period.
Furthermore, a peculiar characteristic of the Pezzata Rossa breed is that of producing milk with a protein component that is on average among the highest when compared with other breeds and a high percentage of A2 beta casein which drastically reduces cases of milk intolerance in the human body.
